I had the prix fixe option. my server was top notch The first two dishes were delicious, but that ends the good. The main dish, both mine and the one my boyfriend got, were under seasoned and just not good. The meat was prepared fine, but the dish seemed uninspired. The sauce on my wagyu was pretty close to the same sauce on the scallops, which seemed like a poor menu design. The dessert was fine, but really nothing special. For the price of a meal here, I expected a lot more and this place just doesn't deliver.

We have been here before and had a wonderful experience of great food and great service. The absinthe bar is amazing. For New Year's, however, they were not at their finest. Limited to the chef's tasting menu, we had planned to have absinthe drinks after dinner and go out onto the strip to celebrate. After 2 and a half hours we were still there waiting on the kitchen. I have done tasting menus before and they can be a wonderful experience. Usually, they follow the order that is presented on the menu but our food, when it finally came, was not in any particular order. Our waitress tried her hardest, even offering a complimentary glass of wine because of all the waiting. We asked that the rest be packed to go as it was taking so long and we were not going to be able to stay and have an absinthe drink. At 4 am when dessert sounded really divine, I discovered the only thing in the box was our last thing we had tried off the menu. $350 later and no dessert really soured my love for this place.

Another perfect dinner. First off thanks to manager Jason, waitstaff John, bartender Aaron and all the others involved with our dinner last night. We've eaten our way around Vegas over the years and Sage stands out as the best of the best by all measures. The wife and I discussed it and decided one word- "Sophisticated", best encapsulates the experience there. The service, ambiance, drinks, and food...all sophisticated. And we love that. Please don't change! Looking forward to our next visit. Now to deal with this absinthe hangover. Thanks Chef Shawn for imagining and making such a place happen.

Have been here twice and will go again. Both times we were seated immediately, without a reservation, even though the place was bustling with a cheerful crowd. Service has been outstanding. Food and wine all we hoped exquisite. The fois gras candy bar for dessert is a sublime surprise—silky, sweet, salty, crunchy, shareable.

Prime restaurant inside Aria for high end dinner. Nice environment, fantastic waiter! Almost all salads and appetizers are worth trying. Best entry is scallops and ox tail - very interesting combination. Perfect cooked. Deserts are super fancy. Over all good experience.

I never had been to Sage before and was looking forward to my absinthe experience for 2 weeks. We chose Sage because it was the only absinthe joint on the strip. Immediately, the servers were extremely cocky and rude in tone and actions. My wife noticed as well and wanted to leave. Because I was looking so much forward to the absinthe, we stuck it out and vowed not to return in the future. I do not care how good the food people think they have, if you have rude customer service on the strip you do not deserve to be there.

Sage is our favorite LV restaurant. Have never had a bad meal there. Great ambiance and service and the menu is so much fun to share with a group. Wine list is very good and extensive. Loved the lamb neck papperdelle and the Snicker foie gras desert was Devine. We look forward every trip to spending at least one night at Sage!!

Our waiter Marcus was fantastic. The ambience and lighting in the restaurant is very nice. Food was good. I had the scallops and the lamb pappardelle to start. We had a group of 7 with a reservation for 8, changed it to 7 easily on Open table. The place is easy to get into and reasonably priced for the quality of the food. Enjoy!!

I loved this restaurant experience. I found the atmosphere and ambiance to be dreamy; accented with purple-blue lights along the walls, it is modern, elegant, intimate and chic. The service was excellent. There were several attendants throughout our dining experience for what seemed like each course we were served; however, our main server was James (excellent). Everyone was courteous and attentive and eager to please. As one example, there was a particular cherry in a cocktail that I liked---a brandied cherry---so two servers brought me some more on a plate! Yay! The house cocktail (I don't recall the name) is tasty, but you won't find it on the menu, you simply need to request the house cocktail. I loved, and I mean, "ordered-it-TWICE-loved," the pink cashmere cocktail. It looks and sounds like a girly cocktail and maybe it is, but it is YUMMY (yes, CAPS YUMMY). The cuisine chosen from the signature tasting menu was absolutely delicious, particularly the heirloom beet salad and the scallops, but everything ordered and served was wonderful...photos follow for you... :-)!

Great food, pretty good service, desserts are a must! Beautiful atmosphere... only thing is the place was empty when we got seated and they sat some family with rotten - ass kids right next to us when there was the whole restaurant... we still went back. Great place, I was on crutches the second time and the hostess was super helpful.

Came during a date and thought it would be a nice location because it is visually very beautiful but our experience wasn't that great. The service was lacking and it didn't seem as though they were busy at the time. The only thing on the menu that really stood out is the Foie Gras Brulee, it was the best item the whole night and it was just an appetizer. I just wish the rest was better.

I would give this restaurant negative stars if I could. True customer service shows through when there is an incident. Unfortunately this restaurant responds very poorly to incidents. The servers here would have let my friend die on the floor if it meant we didn't file a report. But we did file a report. Both myself and my boyfriend got food poisoning from bad foie gras. We tasted it--it tasted funky--so we sent it back, only to be snubbed by the servers. Then 30 min later we went to the bathroom to vomit. We told the servers and they did nothing for us. After about 15 min, they finally called a professional inspector to file a food safety report. A full 30 min later, the food safety guy finally came over. At that same time, my other friend was walking back from the bathroom and took a horrendous spill on their slippery floor, hitting her chin and spraining her ankle badly. It swelled like twice the normal size within minutes. The most horrible part: For literally 10 sec, not a single server came to help her. There were like 10 servers there, and they just watched her writhe on the floor in pain. The inspector ended up filing a report for both incidents. We called the manager of the restaurant (Robert Nikodem) to tell him what had happened. We were appalled by the restaurant's lack of response to both incidents, and hoped he would show us some respect and at least apologize for the terrible experiences we had. Unbelievably, the manager actually snapped at us (like literally talked down to us like children!) and then immediately brought us our check. We paid the full $300+ for our meal even though we never even got the other half of the courses we ordered. We want to be clear that we never once tried to get out of paying, yet we were treated like second class citizens and quickly shooed out the door. But we didn't care. All we wanted was to leave that horrible horrible place. You can tell that the culture of a place pervades every person who works there. Unfortunately for Sage, the terrible lack of customer focus pervades each person from the manager down to the servers. I hope the Vegas hospitality gods give this place what's coming to them and shut this place down for good.

We did quick stop during SALT conference; taken to one of the Aria restaurants; LOVED the 4-course vegetarian offering, especially the corn cakes; pretty good though rather pricey; GLAD I did not have to pick up the check; at least this place doesn't have the unjustifiable sky-high vertigo prices for other Vegas eateries. Kudos to the chef and staff.
