Fat Noodle is in Star City, casino level. It is a restaurant by Luke Nguyen, serving primarily Vietnamese food as well as some Thai dishes.
We tried the salt and pepper silken tofu for our entree, fried with fresh chilli and garlic. This was extremely good.
For the mains we had the fat pho noodles - the chefs signature beef broth with thinly sliced Angus sirloin and brisket, bean sprouts and rice noodles. The flavour was a bit off, too much star anise I think.
We also had the bun Rieu - blue swimmer crab and pork meat ball, Vietnamese ham, puffy tofu, mixed herbs, cabbages, spicy shrimp a paste, rich tomato and vermicelli noodle broth.
We waited a long time and our dining partner got told his would be 25 minutes longer. His wok beef took over 45 minutes which is pretty bad given the size and level of busyness.
