Be a little more careful with the new people,very one will be better. But your chef's new thermometers rather calibration machine, they may not wear out: but remember to check and get better for you, us & them! Great food and Great Chef's need a challenge as well as praise. Think- Antony Bourdain? Why? Just a thought how stressful it can become. From an ant o an elephant! No personnel offence, but what's good becomes better with every small effort & a little more money for you & them without too much more to us? Nirvana! Change nothing and you're still good n better than most, the best is a short distance away! 😊
