This restaurant simply shouldn't exist on the strip. The cost is higher than you would pay for Mexican food almost anywhere in the world and the food is very plain. High cost is an expected part of the strip but with that reality comes an expectation of quality that Diablo simply doesn't have. The crazy part is that you could eat at dozens of world class restaurants within walking distance for just slightly more. The dishes at Diablo's seem to be lost with respect to the flavor profiles of all the ingredients. Understanding how to use citrus in a dish should be a prerequisite of opening a Mexican restaurant. The fact that setups like rice and beans are sold separately on standard dishes like Fajitas is pretty astounding. In a good dish I think Fajitas can stand on there own. Diablo's does not have good Fajitas. I'm not sure how anyone could have thought there unseasoned and overcooked meat could constitute something that could be served by itself. Perhaps the process of brining has never been explained to the cooks. I am going to just stop talking about this place before I upset myself. I will try to address this as clearly as possible, If you love shoveling loads of tasteless garbage into your pie hole, listening to the smacking gums of overweight middle age patrons and watching frat boys, well past there prime, chant chug, chug, chug than by all means this is your place.
